Halloween may be most known for costumes and candy, but it can also be the perfect time for healthy and delicious seasonal recipes. As educational enthusiasts, we would like to raise awareness of the nutritional power of the pumpkin and other fall foods and foster creativity in the kitchen with some sweet and savory recipes.

Although pumpkin is nutritionally more similar to vegetables, it is scientifically a fruit because it contains seeds

  • Orange foods, such as pumpkin, sweet potatoes, butternut squash, and carrots, contain beta-carotene, which helps to regulate the immune system and maintain good vision

  • Pumpkin puree can be used as a substitute for butter or oil in baking recipes

  • Sweet potatoes are high in magnesium, which may help you relax

  • Pumpkin seeds are nutrient rich and also called “pepitas”

  • Eating seasonally is often better because

    • Fruits and vegetables that are in season are more nutrient dense

    • Foods taste better when they are fresh

    • It adds more variety to your diet and you take in a wider range of nutrients
